We are looking for a hardworking and competent F&B manager to grow our F&B expertise and operations. The position will also be responsible for the cafe/bar in the Hotel. In addition the role will supervise our central production kitchen in Kutchan, where food will be prepared for the Izakaya, cafe/deli, room delivery and other F&B services.


The successful candidate will be an experienced Food and Beverage professional looking to further their career in Niseko for the medium to long term and will be based in Niseko.


The Role


Responsibilities include:

  • Planning and organisation for multiple large F&B venues providing breakfast, lunch and dinner daily
  • Recruiting and training restaurant teams
  • Develop menus, select and manage suppliers, budgeting and business planning
  • Manage day-to-day operations within budgeted guidelines and to agreed standards
  • Provide excellent levels of internal and external customer service
  • Identify customers’ needs and respond proactively to customer feedback
  • Lead F&B team by attracting, training and appraising talented personnel
  • Set systems and process to meet financial targets
  • Comply with all health and safety regulations
  • Report on management regarding sales results and productivity
  • Work with the Hotel Managers to deepen a common and consistent understanding of rules and services for guests
  • Develop and maintain daily operational manuals and standard operating procedures
  • Maintain regular communication with F&B staff to proactively identify and address issues and challenges


Knowledge and Skills Requirements


The successful candidate will have:

  • Desire to use and promote locally sourced food and drink
  • Relevant F&B experience in Japan
  • Interest in working in an international environment
  • Experience in hiring and managing staff and leading a team within an F&B operation
  • Knowledge of food and beverages trends
  • Knowledge of current F&B IT systems
  • Knowledge of the regulation and compliance requirements of Japanese Food and Beverage outlets
  • Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
  • Skills and experience in operations planning, forecasting, recruitment and budgeting.
  • Problem solving skills and the ability to effectively resolve issues and develop processes and procedures to improve outcomes.
  • Demonstrated the ability to lead and maximise performance of individuals and teams through effective communication of objectives and expectations, provision of effective feedback, recognition and coaching.
  • Experienced in service recovery and delivering process and systems changes that elevate future service delivery.
  • Relationship management skills to develop new, and maintenance of existing, supplier relationships to ensure the delivery of services in accordance with contracts.
  • Valid driver's license


Language requirements:

  • As a first language, either native English OR native Japanese is essential.
  • As a second language either business level Japanese OR English is required.
  • For further languages, Mandarin, Cantonese or other language skills are preferential


Employment Package Details


Employment Period: Ongoing full time year round


Contract Value: ¥9,000,000 to ¥13,000,000 depending on experience and language skills
(The above remuneration will be divided by 14 and paid monthly with two annual bonuses.)


Location: Niseko, Hokkaido, Japan


Working Hours:

  • Average 40 hours per week (shift times vary by season)
  • 120 days off per year
  • Sick leave: 5 days
  • Annual paid leave: 20 days (after 6 months of employment)
